Lunchtime Inspiration from Keri-anne Payne

Bored of having the same lunch everyday... give this easy lunch a go!

Lunch time can be tricky especially if you're busy and have to produce something nutritious and exciting in 5 minutes!

With a little planning and preparation it's possible! 

When you're cooking your dinner on Sunday evening plan on roasting some extra vegetables to use in your lunch for the next few days. The best thing about this recipe is that you can use any vegetables you like.

My favourite lunch is:

100g carrots 

100g new potatoes

100g parsnips 

Rapeseed Oil 

Salt & Pepper 

1 tsp Rosemary 

Big handful of spinach leaves 

1-2 tbsp hummus 

Sprinkle of omega rich nuts & seeds 

Whole grain crackers

Preheat the oven to 170ºC

Chop the carrots & parsnips in half lengthways and then in half again. Chop the new potatoes in half and transfer all the vegetables to an oven proof dish. Season with the salt, pepper & rosemary and drizzle with some rapeseed oil. Bake in the oven for 45-50 minutes until the potatoes are soft on the inside and golden brown on the outside. 

Leave to cool then place in an airtight container in the fridge until lunch the next day! 

When your ready to pack your lunch, add some of the vegetables to a bed of spinach, add a big dollop of hummus, sprinkle with omega rich nuts & seeds. Finish off a handful of whole grain crackers. 

This should last 2 days in the fridge. Go on give it a go... Planning ahead makes life so much easier!
