Super easy and tasty protein pancakes!

These protein pancakes are one of my favourite recipes. They are so easy to make and are packed with tons of natural protein, the ideal post workout recovery snack. 

All you need is: - 50g oats - 100g cottage cheese - 2 eggs - A little coconut oil for frying 

Add the oats, cottage cheese and eggs to a blender and blend until combined. Add a little coconut oil to a large frying pan and cook for 1 & 1/2 minutes on each side. As a size guide I can usually fit 3 in a pan.

Once cooked serve with your favourite toppings, my toppings of choice are berries with Greek yoghurt. 

I usually make these on a weekend after a really hard Saturday morning workout but you can enjoy them anytime.
